Now we are starting to have a few days of proper sun, I have started to experiment with sorbets. Sorbets can be very refreshing, cooling and a lot less fattening than ice cream. Here is a simple cool fruity recipe perfect for those hot summer days.
Raspberry and blueberry sorbet
2 ½ cups of raspberries
2 ½ cups of blueberries
1 ½ cups of young Thai coconut (available in most Asian stores)
2 teaspoons of vanilla extract
½ cup of Agave Nectar
2 tablespoons of lemon juice
Pinch of Himalayan salt
Directions:
Blend ingredients together until smooth.
Transfer ingredients in a container suitable for freezing.
Leave over night or a few hours in freezer until completely frozen
Serve
This is really nice topped with chopped dehydrated walnuts sprinkled on top.
